An unintentional dinner creation that resulted in an intensely delicious birria-flavored meat and potatoes!

I had first made this chuck roast as part of my meal planning dinners for my family. So, I wasn’t intending to write a recipe out for it, as I just threw things together on the fly…

BUT, the deliciousness took us all by surprise, so my family requested that it become a regular in our dinner rotations.

The meat is delicious, but the birria-flavored potatoes are actually the star of the show, and making soft tacos with just them— honestly made my entire year, lol!
